When you launch a probe, you should be able to redirect it anywhere. In fact, you can while in orbit. Although, if you are in orbit of the planet in a system, you cannot redirect the probe to that system through the UI. You can, however, use the command "pro nav,xxxx' (xxxx= star number) to bypass this. The Ui should know if a probe is freshly being sent or is being redirected, maybe?
